OK so it’s now clear from my posts that I love pork. It’s just so easy to use and inexpensive I find myself cooking it pretty often. Here’s something that is best in the cool weather but honestly any time will do.
Ingredients:
2 cups Mince pork
1/2 cup Bread crumbs
1/2 cup Parmesan
Zest of 1 lemon
Herbs and seasoning to taste: salt, pepper, parsley, thyme
Chicken stock
- Mix in bowl with hands until equally mixed and sticky together well
- Shape into patties
- Crisp both sides in hot oil
- Heat oven to about 200C
- Place in baking sheet and fill with enough chicken stock to half cover patties
- Bake 10-15 minutes and serve with green veg
